Tangy Tuna Salad in Collard Wrap

The classic tuna salad sandwich was given an extreme makeover here. The result is eye-opening and tastebud-tempting!



  • 1/4 cup Greek Yogurt
  • 1/4 cup Mayonaise
  • 1 tbsp Mustard, Spicy Brown
  • 2 tsp lemon peel
  • 1/4 tsp Sea Salt
  • 1/2 tsp Pepper, Ground Black
  • 2/3 cup Fennel, Bulb
  • 2/3 cup Grape Tomatoes
  • 1/2 sweet onion
  • 2 tbsp tarragon, fresh
  • 10 oz canned white tuna (packed in water)
  • 1/3 cup Sliced Almonds
  • 32 oz Collard


1 In a large bowl, whisk together the yogurt, mayonnaise, mustard, zest, salt, and pepper.
2 Add the fennel, tomatoes, onion, and tarragon (or dill), and tuna and stir to combine. (Note: Only drain the tuna if it has extra liquids—or reserve those extra liquids to use for added moistness.)
3 When ready to serve, stir in the almonds (toast them first, if desired).
4 Trim the stem and thick center rib of each collard leaf (or leaf of choice). Add the tuna salad to each of the collard leaves (about 1/2 cup each). Wrap up to enjoy.
