Spinach is a great way to get your fiber in every day.

INGREDIENTS

SERVES 1

  • 2 tsp extra-virgin olive oil
  • 1 garlic clove
  • 3 cups baby spinach

DIRECTIONS

1 Heat oil in non-stick pan over medium-high heat.
2 Add garlic and spinach.
3 Sauté until just wilted.
