Teff, a gluten-free grain that grows in Ethiopia, is naturally high in protein and minerals, making it the pre-workout choice of many long-distance runners. It's loaded with iron, which helps to transport oxygen throughout the body.

INGREDIENTS

SERVES 1

  • 1/3 cup Dry Teff
  • 1/3 cup Cashews
  • 1/3 cup Kefir
  • 2/3 cup raw beets
  • 1 medium banana
  • 4 tbsp Lemon Juice
  • 1 tbsp Flax Seeds
  • 1/2 cup Pomegranate Seeds

DIRECTIONS

1 Bring 1/3 cup of dry teff to a boil, cover and turn off the heat until the water is absorbed.
2 Pickle, roast and cube 1 medium beet.
3 Thinly slice 1 banana.
4 Add the teff, beets, banana, kefir, and 1/3 cup of cashews to the bowl, then dress everything with 4 tablespoons of lemon juice.
5 Scatter 1 tablespoon of flax seeds and 1/2 cup of pomegranate seeds over everything.
