Tex-Mex Burrito Salad

INGREDIENTS

SERVES 1

  • 1 Frozen Bean Burrito
  • 2 cups chopped romaine lettuce
  • 3/4 cup Grape Tomatoes
  • 3 tbsp Frozen Corn
  • 2 tbsp Red Onion
  • 1/4 cup Salsa Verde
  • 2 tbsp fresh cilantro

DIRECTIONS

1 Microwave (or bake) the frozen burrito according to package directions. (Note: Choose a vegetarian or vegan burrito that has up to 300 calories.)
2 Meanwhile, arrange the lettuce, grape tomatoes, thawed corn, and onion on a large plate. Drizzle with 2 tablespoons of the salsa verde
3 Slice the burrito into 6 pieces. Arrange on top of the salad. Drizzle with the remaining salsa. Sprinkle with the cilantro.
