Thai Peanut Entree Salad

Besides a lovely array of raw veggies, this salad offers plenty of culinary yin and yang, including sweetness from honey and saltiness from tamari.

INGREDIENTS

SERVES 1

  • 1 1/2 cups English Cucumber
  • 3 oz Deli Thin Sliced Honey Smoked Lean Turkey Breast
  • 1/3 cup shredded carrots
  • 1/4 cup Red Onion
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint leaves
  • 1 tbsp 100% Juice, Lime
  • 2 tsp Honey
  • 1 1/2 tsp tamari sauce (gluten-free)
  • 1 1/2 tsp Organic Peanut Oil
  • 1 pinch red pepper flakes
  • 3 tbsp Roasted & Salted Peanuts

DIRECTIONS

1 In a pasta bowl, arrange or toss together the cucumber, turkey, carrot, onion, cilantro, and mint. (TIP: Replace turkey with ready-to-eat baked organic tofu, if desired.)
2 In a small bowl or liquid measuring cup, whisk together the lime juice, honey, tamari, peanut oil, and hot pepper flakes. Drizzle over the salad or serve on the side.
3 Sprinkle the salad with the peanuts.
