Like everyone else out there who is so rushed for time in the morning, I had been concerned that cooking eggs for breakfast would take too long (and require me to wash dishes and pans - which I despise). Then I discovered two ways I could enjoy a tasty, filling egg breakfast in less than three minutes time without even dirtying a pan.
INGREDIENTS

2 whole egg

1 Whole Wheat Tortilla - Sprouted Grain

1/8 cup salsa

1/4 cup Black Beans

1 oz Avocados, raw, California

2 tbsp Nonfat Milk

2 tbsp Shredded Cheddar Cheese
DIRECTIONS

Coat 2-oz. microwave-safe coffee mug with cooking spray.

Add eggs and milk; beat until blended.

Microwave on HIGH 45 seconds; stir.

Add in black beans and stir again.

Microwave until eggs and beans are almost set, 30 to 45 seconds longer.

When the eggs and bean mixture is hot, spoon it out onto the tortilla, and top with shredded cheese, chopped avocado and salsa.

Wrap it up and eat it.
