Tofu and Mixed Rice Grain Salad

For this slaw, almost any grain will taste good. We used a combination of black rice and short-grain brown rice to create a uniquely delicious pairing.

INGREDIENTS

SERVES 3

  • 1/4 cup Olive Oil, Extra Virgin
  • 1 tsp Tamari Soy Sauce
  • 4 tsp Apple Cider Vinegar
  • 4 tbsp Orange Juice
  • 1 tsp Honey
  • 1/2 tsp Ginger Juice, Naturally Pressed Original
  • 3 tbsp Seeds, sesame seeds, whole, dried
  • 2 medium raw carrots
  • 2 stalk , medium celery
  • 12 piece Tofu
  • 3/4 cup Cooked Brown Rice, Organic
  • 1/4 cup Black Rice

DIRECTIONS

1 Mix the oil, tamari, vinegar, orange juice, honey and ginger to make a dressing and set aside.
2 Place the sesame seeds in a small frypan and toast them over medium heat, stirring continuously, until they begin turning brown and fragrant. Approximately 4 minutes. Then set aside.
3 Mix the cabbage, carrots, celery and rice in a large bowl. Mix in the sesame seeds and dressing.
4 Note:
5 This recipe uses ¼ cup black rice and ¾ cup brown rice cooked in 21/2 cups of water for 45 minutes.
