Tofu Tex-Mex Black Bean Soup

Add protein and nutrition to canned black bean soup by topping it with tofu and chopped fresh vegetables.

INGREDIENTS

SERVES 1

  • 1/4 medium avocado
  • 1/4 cup cherry tomatoes
  • 1/8 medium red onion
  • 1/4 lime
  • 1 cup canned black bean soup
  • 4 oz firm tofu

DIRECTIONS

1 Combine the avocado, tomatoes, onion (about 2 tablespoons), and lime juice. Set aside.
2 Prepare soup according to package directions and add tofu.
3 Pour into bowl and top with avocado-tomato mixture.
