A spicy and flavorful vegan, vegetarian, and gluten-free stir-fry.

1/2 tsp rice vinegar

1/2 tsp tamari sauce (gluten-free)

1 tbsp water

1/4 tsp minced ginger

1/4 tsp red pepper flakes

1 tsp safflower oil

6 oz firm tofu

1/2 red bell pepper

1/2 yellow bell pepper

2 cups baby spinach

Combine the rice vinegar, soy sauce, water, ginger, and red pepper flakes. Stir to combine and set aside.

Heat the oil in a nonstick skillet over medium heat. Place the tofu in a single layer in the skillet.

Cook 2 to 3 minutes, then flip the tofu and cook 3 more minutes, stirring to brown all sides of the tofu.

Add the bell peppers and spinach.

Stir in the dressing mixture and cook, stirring, 3 more minutes, or until the peppers are slightly softened.
