Tropical Chocolate Truffles

  • 1/4 cup Shredded Unsweetened Coconut
  • 2 cups Raw Walnuts, Organic, Halves & Pieces
  • 16 average sized dates Medjool date
  • 1/2 cup Raw Cacao Powder
  • 1 pinch Salt
  • 1/2 cup Dried Mango


1 Place 1/4 cup shredded unsweetened coconut in a small bowl and set aside.
2 Put 1 2/3 cups raw English walnut pieces in a food processor fitted with an S blade and process until fine. Add 16 pitted and chopped Medjool dates, 1/2 cup raw cacao or unsweetened cocoa and 1/8 teaspoon salt; process until smooth.
3 Place the mixture in a bowl and, by hand, fold in 1/2 cup finely chopped dried mango -- or other dried fruit -- and 1/3 cup raw English walnut pieces until they're evenly distributed throughout.
4 Make each truffle by gently rolling and shaping a full tablespoon of the mixture in your hands to form a small ball. After each one is made, immediately put it into the shredded coconut and roll it around until evenly coated. Place on a platter or round plate.
5 For an elegant presentation, place each truffle in an individual paper candy cup. Refrigerate the truffles, uncovered, for several hours before serving.
