Along with its tropical flair, this palate-pleasing parfait will give you a punch of high-quality protein. Make it your own by layering it with other favorite seasonal picks in place of the kiwifruits, such as 3/4 cup of diced fresh pineapple, mango or peach.
INGREDIENTS

1 Banana, small

3/4 cup plain low-fat Greek yogurt

1/4 tsp pure vanilla extract

2 tbsp Organic Toasted Coconut Chips

2 kiwi
-
2 tbsp Sliced Natural Almonds

10 raspberries Raspberry
DIRECTIONS

In a medium bowl, fully mash the banana using a potato masher or fork. Add the yogurt and vanilla extract and stir to combine. (Note: It’s OK if the texture is slightly lumpy.)

Layer the yogurt mixture, coconut chips, kiwi and almonds into a two-cup capacity parfait glass or jar.

Garnish with fresh raspberries.
