Turkey and Cashew Salsa Chili

This quick homemade chili gets protein from turkey and beans, and a unique crunch from chopped cashews.

INGREDIENTS

SERVES 1

  • 2 tsp extra-virgin olive oil
  • 4 oz lean ground turkey
  • 1/3 cup canned kidney beans
  • 1/4 cup salsa
  • 8 cashews
  • 1 dash chili powder

DIRECTIONS

1 Heat oil in a saucepan, and cook the turkey about 3 minutes, stirring, until no longer pink.
2 Add beans, salsa, cashews, and chili powder, stirring to combine. Cook until heated through.
