Turkey Meatloaf "Muffins"

This turkey meatloaf tastes just as good as the real thing. For an optional side dish, make our simple sweet potato mash frosting. Sweet potatoes are super underrated when it comes to their health benefits. They contain tons of vitamins A and C, which boost eye health and support your immune system, as well as other anti-inflammatory nutrients.

INGREDIENTS

SERVES 12

  • 2 lb Lean Ground Turkey
  • 3/4 cup White Onion
  • 2 cups Broccoli Florets
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 cup Panko
  • 2 tbsp Minced Garlic
  • 1 large whole egg
  • 1 tbsp Worcestershire Sauce
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper
  • 1 tbsp Coconut Sugar
  • 3/4 cup Ketchup
  • 1 second Coconut Oil Spray
  • 2 medium Murasaki Sweet Potato
  • 2 tbsp unsalted butter
  • 1/4 cup Whole Milk
  • 1 tsp Spices, pepper, white

DIRECTIONS

1 Add the broccoli florets to a food processor and blend into broccoli rice.
2 In a large bowl, mix the broccoli rice, ground turkey, onions, Parmesan cheese, panko breadcrumbs, garlic, egg, Worcestershire sauce, coconut sugar, ½ cup ketchup, 1/4 tsp salt and 1/4 tsp pepper.
3 Spray coconut oil over a muffin pan.
4 Divide the turkey mixture into the 6 muffin cups, about 4 oz’s each. Mold the top of the muffins into domes. Brush with remaining ketchup.
5 Pre-heat oven to 350 degrees Fahrenheit and bake for 45 minutes.
6 Let rest for 5 minutes. Best served while still warm.
7 Optional: Sweet Potato Mash Frosting
8 Peel the white sweet potatoes and cut them into large pieces, about 2-3 oz each.
9 Boil water in a large pot and add the sweet potato.
10 Boil for 20-30 minutes or until soft.
11 Drain and add the sweet potato back into same hot pot.
12 Add butter, milk, 1/4 tsp salt and 1/4 tsp pepper. Mash until fluffy.
