Turkey and Swiss Cheese Roll-Ups with Slaw

Hot turkey and cheese roll-ups provide protein, and a crunchy slaw packs fiber and antioxidants.

INGREDIENTS

SERVES 1

  • 1/2 cup shredded red cabbage
  • 1/2 tsp honey
  • 1/2 tsp red wine vinegar
  • 1 tbsp dried cranberries
  • 2 tsp whole grain mustard
  • 4 oz deli sliced turkey
  • 2 oz sliced reduced-fat Swiss cheese

DIRECTIONS

1 Line a broiler rack with foil and place about 4” from heat. Preheat broiler.
2 Combine cabbage, honey, vinegar, cranberries, and mustard in a bowl.
3 Lay cheese on top of turkey and roll into a spiral.
4 Place turkey roll-up on broiler rack and broil until cheese melts.
5 Remove roll-ups from pan and serve with slaw.
