Turkey Tacos

These flavorful turkey tacos feature a surprising ingredient: yogurt, a lower-fat alternative to sour cream. Simply mix cumin, shredded carrots and chopped cilantro with sliced leftover turkey meat. Add this mixture to corn tortillas, and top it off with some shredded cabbage, avocado slices, salsa and a dollop of yogurt.

INGREDIENTS

SERVES 4

  • 12 Soft Corn Tortillas
  • 2 medium raw carrots
  • 1/3 cup Parsley
  • 1/2 tsp Ground Cumin
  • 1 cup raw green cabbage
  • 1 fruit without skin and seed Avocados, raw, California
  • 4 tbsp Salsa, Mild
  • 4 tbsp Yogurt, Plain
  • 1/2 lb roasted turkey breast
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper

DIRECTIONS

1 Pull the turkey apart into small pieces.
2 Mix the shredded carrot, cumin, parsley/cilantro and turkey in a bowl and mix in a pinch of sea salt and a sprinkle of pepper.
3 Place a small amount of the mixture on each of the tortillas.
4 Add a small amount of shredded cabbage to each.
5 Then add avocado slices, salsa, and yogurt.
