Prepare the quinoa (or whole grain of choice) according to package directions.

Meanwhile, heat the oil in a large saucepan over medium. Add the onion, bell pepper, and vinegar and cook while stirring occasionally until the onion is softened, about 8 minutes.

Add the garlic and cook while stirring until fragrant, about 1 minute. Add the beans, broth, tomato, and Cajun seasoning and cook while stirring on occasion until the bean mixture is stew-like, about 10 minutes. Adjust seasoning. (Note: If using salt-free Cajun seasoning, add 1/2 teaspoon sea salt to the recipe.)

Serve the quinoa in individual bowls, top with the bean mixture, and sprinkle with the parsley.

Enjoy with grapes (or other seasonal fruit) on the side.
