This chocolate pudding satisfies any sweet tooth without the guilt. It features two unique ingredients: avocado and aquafaba.
INGREDIENTS

2 fruit without skin and seed Avocados, raw, California

1/4 cup Cacao Powder

1/2 cup Maple Syrup

1 tsp Vanilla Extract

1/4 cup Almond Milk

1 tbsp Coconut, Unsweetened, Medium Shredded

1 tbsp Granulated Sugar

1/4 cup Aquafaba
DIRECTIONS

In a mixer combine avocados, cacao powder, maple syrup, vanilla, almond milk and coconut shreds. Once the mixture is well-mixed (the texture should be consistent), divide into two glasses. Chill in the refrigerator for at least 30 minutes.

Before serving, add aquafaba to the mixer and blend on high speed for about 10 minutes; stiff peaks will form. Add the sugar into the whip in small quantities.

Spoon the whipped topping onto the top of each cup of pudding.

Note: Top with mint, raspberries or your garnishment of choice.
