Vegan Fresh Peppermint Shake

The combination of fresh peppermint leaves and pure peppermint extract provides the perfect minty flair while the pairing of avocado and spinach provides all of the natural greenness you would expect from a minty shake. And since it’s made with plain unsweetened almond milk, it’ll fit into the diets of even the strictest of vegetarians.

INGREDIENTS

SERVES 1

  • 2 tbsp Organic Hemp Seed, Raw Shelled
  • 1 1/2 tsp chia seeds
  • 3/4 cup Almond Milk, Original
  • 1/2 cup Baby Spinach
  • 1/2 fruit without skin and seed Avocados, raw, California
  • 10 Mint Leaves Peppermint Fresh
  • 1/2 tsp Vanilla extract
  • 1 serving Extract, Pure Almond
  • 4 package stevia
  • 5 Ice Cube

DIRECTIONS

1 Add the hemp seeds, chia seeds (ideally white chia seeds), almond milk, spinach, avocado, peppermint leaves, ice cubes, vanilla extract, peppermint extract, and stevia (or another naturally-derived sweetener) to the blender. (Hint: For best results, dice and freeze the 1/2 avocado about 30 minutes before prep.)
2 Cover and puree on high speed until creamy.
3 Pour into a 2-cup capacity jar or chilled glass and serve.
4 NOTE: Since the size of ice cubes vary, adjust as needed.
