Vegan Lentil Crisps

These tasty and healthy lentil crisps are a better alternative to chips or crackers!

INGREDIENTS

SERVES 10

  • 2 cups Red Lentils
  • 2 cups Vegetable Broth
  • 1 cup Water
  • 1 cup Rice Flour, Brown
  • 1 head about Garlic, Roasted
  • 1/2 tsp Sea Salt
  • 1/4 cup Organic first cold-pressed 100% Italian Extra Virgin Olive Oil

DIRECTIONS

1 Combine the lentils, veggie broth and water in a medium saucepan over medium-high heat. Bring it to a boil, then turn the heat down and simmer until the lentils are soft (about 10-15 minutes). Drain most of the liquid off and transfer to a bowl. Preheat your oven to 400 degrees F.
2 Add the rice flour (or you can use regular unbleached flour), smoked roasted garlic, sea salt and olive oil. Stir to combine.

4 Pour it onto the baking sheet and spread it as thin.
5 Bake in oven for about 10-15 minutes, and keep an eye on it because baking will depend on thickness of the cracker. Take it out when the edges are golden-brown edging. Let cool before eating!
