Vegan Quinoa Pilaf & Sauteed Spinach

Quinoa is an excellent grain to add to meals or salads. It's a good source of both carbohydrates and protein.

INGREDIENTS

SERVES 1

  • 2 cups baby spinach
  • 1 garlic clove
  • 2 tsp extra-virgin olive oil
  • 2/3 cup cooked quinoa
  • 1/4 cup dried cranberries
  • 8 almonds
  • 1/4 lemon
  • 1 dash salt and pepper

DIRECTIONS

1 Saute spinach with garlic and olive oil.
2 Toss with cooked quinoa.
3 Add cranberries, pine nuts, and toss.
4 Dress with lemon juice, salt and black pepper.
