Vegetable Lovers’ Oatmeal

Oatmeal is just as good when it’s savory as when sweet -- maybe even better!

INGREDIENTS

SERVES 2

  • 2 1/2 cups low-sodium vegetable broth
  • 3 stalk scallion(s)
  • 1 cup Old-fashioned Oats
  • 15 serving Tomato, Grape
  • 2/3 cup low-fat cottage cheese
  • 5 oz Baby Spinach Salad
  • 1 tsp Grated lemon zest
  • 3/4 tsp sea salt
  • 1/2 tsp ground black pepper

DIRECTIONS

1 Bring the broth (or water) and scallions to a boil in a large saucepan.
2 Reduce heat to medium, add the oats and tomatoes, and stir occasionally until fully cooked, about 5 minutes. Add the cottage cheese and spinach and stir until the spinach is wilted and cottage cheese is fully heated, about 2 minutes.
3 Remove from the heat, stir in the lemon zest, salt, and pepper, and serve.
