Vegetarian Chili Potato

This classic combination gets new life as a snack.

INGREDIENTS

SERVES 1

  • 1 medium Russet Potato
  • 1/3 cup Chili Vegetarian
  • 2 tbsp Organic Lowfat Sour Cream

DIRECTIONS

1 Pierce the potato with a fork several times. Microwave on high until cooked through, about 5 minutes.
2 Carefully cut the potato in half. Add salt to taste, if desired.
3 Top each half with the chili (such as Amy’s Organic Medium Chili) and sour cream.
4 Optional Add-On: Fresh cilantro or scallions.
