Vegetarian Italian Eggplant Parm

Just like the classic without all the extra calories.

INGREDIENTS

SERVES 1

  • 2 small eggplant
  • 1/2 cup marinara sauce
  • 1/4 tbsp grated parmesan cheese

DIRECTIONS

1 Preheat the oven to 350 degrees.
2 Slice eggplant into ½-inch thick pieces.
3 Spray eggplant with olive oil cooking spray.
4 Bake eggplant 3 to 5 minutes per side until just done.
5 Layer with sauce and cheese.
6 Put back in oven and bake until the sauce is heated through.
