When you combine the concept of pizza with the luscious ingredients of a bean burrito, everyone wins. Health benefits include plenty of fiber, thanks mostly to the beans, as well as a healthy dose of fresh vegetables including corn, cherry tomatoes and avocado.

1 cup vegetarian refried beans

4 tbsp salsa verde

1/8 cup Whole Wheat Pastry Flour (100% Stone Ground)

16 oz Whole Wheat Pizza Dough

2 cups Cherry Tomatoes

1 cup frozen corn kernels

1 tbs Avocado Oil
-
1/8 tsp Sea Salt

8 tbsp Guacamole
-
4 tbsp Cilantro
-
4 Lime Wedge
DIRECTIONS

Place a stick-resistant large baking sheet in 500°F oven to preheat.

Meanwhile, in a medium bowl, stir together the refried beans and salsa. Set aside

Lightly flour a clean kitchen surface. Shape dough by hand or with a rolling pin into a four (6½-inch) round crusts.

Carefully transfer the prepared dough to the preheated baking sheet. Quickly spread with the refried bean mixture, leaving about 1⁄4-inch rim, and sprinkle with the sliced cherry tomatoes, thawed corn, avocado oil (or olive oil), and salt.

Bake until the crust is crisp and brown and corn begins to caramelize, about 15 to 17 minutes.

Dollop with guacamole, sprinkle with cilantro, and serve with lime wedges.
