Vegetarian Taco Salad with Brown Rice

This salad has lots of filling fiber from lettuce, beans, and brown rice, plus a serving of complete protein.

INGREDIENTS

SERVES 1

  • 2 cups chopped romaine lettuce
  • 3/4 cup canned black beans
  • 1/3 cup cooked brown rice
  • 1/4 cup frozen corn kernels
  • 1 cucumber(s)
  • 1/2 cup cherry tomatoes
  • 1/2 medium avocado
  • 2 tsp plain low-fat Greek yogurt
  • 1/4 lime
  • 1 dash salt and pepper
  • 1 tbsp shredded cheddar cheese

DIRECTIONS

1 Place romaine, beans, rice, corn, cucumbers, tomatoes, and avocado in a bowl. Set aside.
2 Mix together yogurt, juice from the lime, salt and pepper.
3 Toss salad with yogurt lime dressing.
