Trail mix isn’t just for snacking. It's a highlight of this leafy quinoa salad, giving it the perfect accent of crunchiness, chewiness, fruitiness and nuttiness. Want another highlight? Use red quinoa instead of regular quinoa for a vibrant bowl of goodness.
INGREDIENTS

1 tbsp Lemon Juice

1 tbsp extra-virgin olive oil

1/4 tsp sea salt

1/4 tsp ground black pepper

3/4 cup cooked quinoa
-
1/4 cup Organic Shelled Edamame
-
2 tbsp Basil, Fresh
-
1/4 cup All Energy Trail Mix, Unsalted

2 cups Baby Arugula
DIRECTIONS

In a serving bowl, whisk together the lemon juice, oil, salt, and pepper.

Add the chilled quinoa, edamame and basil and stir to combine.

Add the trail mix and arugula and toss to combine. (TIP: For the trail mix, you can use a mixture of your favorite dried fruit, nuts and seeds.)

TIP: Cook quinoa in advance (in bulk, if able) and chill before using for this recipe. Same with edamame.
