Vegetarian Trail Mix Quinoa

Trail mix isn’t just for snacking. It's a highlight of this leafy quinoa salad, giving it the perfect accent of crunchiness, chewiness, fruitiness and nuttiness. Want another highlight? Use red quinoa instead of regular quinoa for a vibrant bowl of goodness.

INGREDIENTS

SERVES 1

  • 1 tbsp Lemon Juice
  • 1 tbsp extra-virgin olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 3/4 cup cooked quinoa
  • 1/4 cup Organic Shelled Edamame
  • 2 tbsp Basil, Fresh
  • 1/4 cup All Energy Trail Mix, Unsalted
  • 2 cups Baby Arugula

DIRECTIONS

1 In a serving bowl, whisk together the lemon juice, oil, salt, and pepper.
2 Add the chilled quinoa, edamame and basil and stir to combine.
3 Add the trail mix and arugula and toss to combine. (TIP: For the trail mix, you can use a mixture of your favorite dried fruit, nuts and seeds.)
4 TIP: Cook quinoa in advance (in bulk, if able) and chill before using for this recipe. Same with edamame.
