Veggie-Packed Meatloaf

Meatloaf is a simple, delicious comfort food and is an easy way to sneak in extra vegetables like bell peppers and zucchini for picky eaters.

INGREDIENTS

SERVES 6

  • 1 red bell pepper
  • 1 medium red onion
  • 1 zucchini(s)
  • 1 cup frozen spinach
  • 2 tsp Olive Oil, Extra Light in Flavor
  • 1 lb lean ground beef
  • 1 Egg
  • 1 cup Bread Crumbs, Plain
  • 1/4 cup Parmesan Cheese, Grated Cheese
  • 1 dash salt and pepper

DIRECTIONS

1 Finely chop 1 small red bell pepper, 1 small red onion, 1 small zucchini and 1 cup thawed frozen spinach.
2 Cook vegetables in a few teaspoons of olive oil until softened; drain away any excess liquid.
3 Cool completely, then add to 1 pound lean ground beef in a large bowl.
4 Add 1 beaten egg, 1 cup panko bread crumbs, 1/4 cup grated parmesan cheese and salt and pepper to taste.
5 Press mixture into a loaf pan, cover tightly with plastic wrap, and refrigerate for up to 2 days. Bake in a preheated 425-degree oven for 1 to 1 1/2 hours.
