Watermelon Chia Seed Fresca

Frescas are traditional Mexican beverages. This version features chia seeds, which are a great source of calcium and omega-3 fats.

INGREDIENTS

SERVES 2

  • 6 cups cubed watermelon
  • 1 leaf fresh mint leaves
  • 1/2 medium Lime
  • 1 tbsp chia seeds

DIRECTIONS

1 Run watermelon, mint and lime through a juicer.
2 Pout the mixture into a pitcher, then stir in chia seeds.
3 Refrigerate for 10-15 minutes to allow the chia seeds to absorb the juice.
4 Enjoy!
