Western-Style Eggs in a Wok

Use a wok to quickly whip up this healthy, veggie-filled breakfast.

INGREDIENTS

SERVES 1

  • 1 tbsp grapeseed oil
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 shallot(s)
  • 1 Jalapeno Pepper
  • 2 Free Range Egg
  • 1/4 tsp sea salt
  • 1 tbsp fresh cilantro

DIRECTIONS

1 Heat the oil in a well-seasoned wok (or large stick-resistant iron skillet) over high heat. Add the bell peppers, shallot, and jalapeño and stir-fry until just cooked through, about 2 minute.

3 Add the eggs and salt and stir-fry until the eggs are scrambled, about 30 seconds.
4 Sprinkle with the cilantro, if using.
