Pine Nut and Spinach Pasta

With pasta dish packed with green veggies broccoli and spinach will become a new favorite.

INGREDIENTS

SERVES 1

  • 1/2 cup dry whole-wheat pasta
  • 1 tsp extra-virgin olive oil
  • 2 cups baby spinach
  • 1/2 garlic clove
  • 1 cup broccoli florets
  • 1 dash salt and pepper
  • 1 1/2 tbsp pine nuts

DIRECTIONS

1 Boil water in a saucepan; add pasta and cook until al dente, according to package instructions. Drain and set aside.
2 Heat nonstick pan with medium heat; saute spinach in oil with garlic, about 5 minutes.
3 Steam broccoli.
4 Toss pasta with spinach and broccoli.
5 Add salt and black pepper to taste.
6 Top with pine nuts and serve hot or cold.
