Wild Mushroom and Baby Spinach Egg Skillet

This vegetable lover’s recipe is simple, since everything is just sauteed up in one skillet.

INGREDIENTS

SERVES 1

  • 1 tbsp extra-virgin olive oil
  • 4 oz fresh wild mushrooms
  • 4 oz baby spinach
  • 1/4 tsp Sea Salt, Coarse, Mediterranean
  • 1/2 peeled fruit lemon
  • 2 tsp Romano, Freshly Grated
  • 1/8 tsp ground black pepper
  • 2 Free Range Large Eggs

DIRECTIONS

1 Heat 2 tsp. of the oil in a large (PFOA-free) nonstick skillet over medium-high. Add the mushrooms, spinach, and 1/8 tsp. of the salt and sauté until the spinach is just wilted, about 2 minutes. Push the mixture to one side of the skillet.
2 Add the remaining 1 tsp. oil to the other side of the skillet. Add the eggs and remaining 1/8 tsp. salt, cover, and fry until desired doneness, about 2 to 2 1/2 minutes.
3 Transfer the vegetable mixture and eggs to a plate. Squirt with the lemon to taste. Sprinkle with the cheese and pepper.
