INGREDIENTS

SERVES 4

  • 1 1/2 tbsp grapeseed oil
  • 1 onion
  • 1 Jalapeno Pepper
  • 2 garlic clove
  • 1 1/4 cups low-sodium vegetable broth
  • 1 cup Apple Juice 100% juice
  • 1 tsp Fresh Oregano
  • 1/4 tsp Cinnamon, Ground
  • 3 cups White Beans
  • 1/2 tsp sea salt
  • 1 pinch ground black pepper
  • 1/2 cup Shredded Pepper Jack Cheese
  • 1/4 cup Cilantro

DIRECTIONS

1 Heat the oil in a large saucepan over medium-high heat. Add the onion and jalapeño. Sauté until the onion is softened and lightly browned, about 5 minutes. Add the garlic and sauté until fragrant, about 30 seconds.
2 Stir in the broth, juice, oregano, and cinnamon and increase the heat to high. Bring to a full boil, stir in the beans, salt, and black pepper, and return to a boil. Cover, reduce heat to low, and simmer until flavors are combined, about 10 minutes. Taste and adjust seasoning.
3 Transfer to 4 bowls, sprinkle with the cheese and cilantro, and serve.
4 {WITH POULTRY, FISH, OR MEAT} one serving: Top one bowl with 6 grilled or steamed large shrimp instead of the cheese. Season to taste. (Use 1 1/2 oz instead of 2 oz Monterey Jack cheese for the remainder of the bowls.)
