Zucchini “Fettuccine” Alfredo

INGREDIENTS

SERVES 2

  • 2 tsp Unsalted Butter
  • 2 zucchini(s)
  • 1 garlic clove
  • 1/2 tsp sea salt
  • 1/4 cup Heavy Whipping Cream
  • 2 tbsp Parmesan cheese
  • 1/4 tsp ground black pepper
  • 1 pinch Nutmeg, Ground

DIRECTIONS

1 Melt the butter in a large (PFOA-free) nonstick skillet over medium-high heat.
2 Slice zucchini into fettuccine-like strips with a vegetable peeler (15 oz. strips; 4 cups). Stir in the zucchini, garlic, and salt, cover, and cook until the zucchini is tender, about 3 minutes, stirring once.
3 Uncover, add the cream, Parmesan cheese, pepper, and nutmeg and toss until heated through, about 30 seconds.
