Zucchini and Roasted Corn Mason Jar Salad

Cherry tomatoes, roasted corn and fresh mint add a vibrant splash of color to this refreshing salad. If you don't have a spiralizer, you can shred the zucchini using a grater or mandolin.

INGREDIENTS

SERVES 1

  • 1 medium zucchini
  • 1/2 cup Cherry Tomatoes
  • 1/4 cup Roasted Corn
  • 1/4 cup feta cheese
  • 1 tbsp Fresh Mint
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tsp Salt
  • 1/4 tsp Pepper, Black

DIRECTIONS

1 In a colander, toss zucchini with salt; set aside in sink for 30 to 60 minutes.
2 Squeeze water and salt out of zucchini.
3 Mix olive oil, lemon juice and pepper together. Pour into bottom of Mason jar.
4 Add the shredded zuchinni, then the cherry tomatoes, then the feta cheese and then the roasted corn. Top with chopped mint leaves.
5 Scoop into a Mason jar and seal until ready to eat.
