I'm Diane Hoch, and this is healthy sweet potato tacos. Sweet potatoes help promote immune system health, are high in fiber, and when cooked help prevent sweet cravings. Create a shell using them and now you have a healthy, satisfying, and delicious meal. Over medium heat we're going to saute our onions in some olive oil. We're going to add our garlic, then we're going to add our chile powder and cumin and saute. We're going to add in a little sea salt and black pepper and then our chopped kale. Next we're going to fold in our pinto beans and get ready for the cubed sweet potatoes. So we've taken our sweet potatoes out of the oven and we slice it down the line where we pierced it with a fork. Open it up, we're going to slice out a rectangle shape so that we can lay it on the board, cut it into cubes and fold it into our mixture. Folding it into the mixture we've now created the filling for the sweet potato, fill it up nice and full, put it back in the oven for the last give minutes to crisp up the top and you've got a beautiful, satisfying, and delicious meal. Sweet potatoes are rich in antioxidants such as vitamin B6 and C, as well as the anti-stress mineral magnesium. I love this family favorite dish.
