Hi I'm Rosie Battista, with Sleeping Naked After 40, to show you how to make a hearts of palm beet salad. So beets are this beautiful red, really really healthy so I did this really simple. Now you can go and you can roast your own beet but they sell already roasted beets in a little package and they are just beets so I like that because there is no added, unnecessary stuff in there and they are already done for me so I just chopped them up and I'm going to add them to the top of my greens, looking gorgeous with the red and green. And then I just simply opened a can of mandarin oranges and again I looked at the ingredients and there is only mandarin oranges in here, no added sugars, and so I'm going to put some orange, little mandarin slices on top of that, so some gorgeous. And then I'm going to take the hearts of palm which have already been cut into salad size pieces for me, and this is really cool, so I don't really have to do any work and I have this beautiful, really different looking salad right here that all I have to do now is making some amazing healthy dressing and we're good. So I've taken a couple cloves of already roasted garlic which I simply just put in the oven. I'm taking two dates, two pitted dates, some cilantro and some parsley, cashews, a beautiful avocado and what we're going to do is I just cut it in half and I'm just squeezing it right into the blender. Okay, this is a gorgeous mint green avocado dressing right on top of our salad. And here you have your hearts of palm beet salad.
