Zaba's Mexican Grill, a locally owned dining establishment in Las Vegas, Nevada, has been serving up freshly prepared Mexican cuisine since October, 2001. Each Zaba's location offers customizable burritos, bowls, nachos, tacos, quesadillas and salads. While Mexican fare is usually considered a diet buster, you don't have to derail when you eat at Zaba's.

Zaba's uses as many fresh ingredients as possible. At each restaurant location, the staff trims and marinates meats in-house and makes all sauces, guacamole and beans from scratch every day.

Healthful Choices

Catering to health-conscious diners, Zaba's offers brown rice, sweet potatoes, whole wheat tortillas, all containing whole grains and fiber, and cilantro pesto, lower in fat than other creamy dressings. If you want to eat healthfully at Zaba's, consider choosing a whole wheat burrito or Zaba's bowl with low-fat and high protein grilled chicken, shrimp or fish, fiber-rich black beans, vegetables and salsa. If you order a salad, stick with the cilantro pesto dressing instead of ranch or vinaigrette.

Items To Avoid

A few items at Zaba's can quickly derail any diet. Avoid the nachos and quesadillas, which are coated or filled with melted cheese and sour cream and may contain 20 to 30 g of fat each. Tacos may be a good choice, but keep in mind that whole wheat tortillas are not an option. While a margarita may complement a Mexican meal, the sugary beverage adds over 200 calories and up to 40 g of carbs. Zaba's homemade brownies may sound tempting, but they'll certainly take a toll on your diet. An average 2-inch square brownie contains 112 calories and nearly 7 g of fat.

Cutting Calories

Even with healthy substitutions, a Zaba's entree can be heavy on the calories. A whole wheat chicken burrito with hot sauce, brown rice and cheese contains 755 calories. To reduce the calorie content of this or other entrees, skip the cheese, guacamole and sour cream, or come with a friend and split an entree between the two of you. If you order a salad, get the dressing on the side and dip your fork into the dressing before each bite to get the flavor without all the calories and fat.
