Bob's Red Mill, a grain and flour producer based in Oregon, states that 1/4 cup of spelt flour contains 120 calories, 10 of which come from fat.
Carbohydrates and Protein
A quarter cup of spelt flour contains 22 g of carbohydrates, including 4 g of dietary fiber and 4 g of protein.
Vitamins and Minerals
California-based Grindstone Bakery notes that 1 oz. of spelt flour contains 38.5 percent of the recommended daily value for vitamin B2, 31 percent of the daily value for manganese and 12 percent each of vitamins B1 and B3.
