Most potato salad recipes call for peeled boiled potatoes. Peeling boiled potatoes is much more comfortable after they have cooled, but busy cooks don't always have time to wait for the spuds to cool down on their own. Rather than scorch your hands, there is a simple solution for how to peel boiled potatoes.

Step 1

Drain boiled potatoes into a colander and let the water run completely out.

Step 2

Fill a large bowl with ice water and pour the hot potatoes into it. Let them sit for two to three minutes.

Step 3

Pour the potatoes back into the colander and let the cold water drain out.

Step 4

Pick up a potato with your non-dominant hand, hold a paring knife in your dominant hand and pinch a curled piece of potato skin between the blade of the paring knife and your thumb.

Step 5

Peel all of the skin away from the boiled potato gently. Repeat for the remaining potatoes.
