Baked whiting is a rib sticking meal that will warm you up on a cold winter day. Whiting is a fish similar to cod and the white fillets have a mild flavor that is less fishy than catfish. With nothing more than an oven at your side, you can prepare a fully cooked meal of baked whiting in less than 90 minutes.
Preheat your oven to 400 degrees Fahrenheit.
Slice two lemons width wise so that you have ¼ inch rings and slice 2 medium onions into 1/8-inch rings.
Place the onions and lemons in the 9 by 13 glass baking dish; avoid more than one layer as much as you can.
Slice 4 tbsp. of unsalted butter into 1/8-inch squares and set them throughout the baking dish.
Place 1 tsp. of chopped or powdered thyme over top of the onions and lemons. Season the onions and lemons with salt and pepper generously.
Place the glass baking dish into the oven and allow it to cook for 40 minutes or until the onions are translucent.
Remove the dish from the oven and lay your whiting fillets overtop of the lemons and onions. Baste the fillets with the juices from the cooked lemon and onion mixture.
Season the fillets with salt and pepper, place four sprigs of fresh thyme over top of the fillets, and place the dish back in the oven to finish cooking.
Allow the fish to cook for an additional 16 to 18 minutes. The whiting fillets should just begin to turn opaque when you pull the fillets out of the oven.
Serve hot with cooked onions and lemons.
