You can make several changes to keep these cookies healthy. Replace refined sugar with honey and maple syrup, natural organic sweeteners that prevent spiking of insulin, which slows the body's metabolism. Use baking powder and oil instead of eggs to reduce the cholesterol content of the recipe.
Step 1
Preheat the oven to 350 degrees Fahrenheit. Spray the two cookie sheets with the light oil cooking spray and set the sheets aside.

Mix together the oats, whole wheat and white flours, nutmeg, raisins, nuts, baking powder, sea salt and cinnamon in one of the mixing bowls. Use a large wooden spoon to mix thoroughly.

In a separate mixing bowl, combine the safflower oil, vanilla extract, honey, maple syrup and apple juice. Use a whisk to mix these ingredients more completely.

Mix together the wet and the dry ingredients in one of the bowls. Stir the mixture thoroughly with the wooden spoon, until everything is evenly distributed and the dough seems uniform.

Drop cookie dough balls onto the cookie sheets. Using two spoons, pick up a spoonful of dough in one spoon and use the other spoon to push it off onto the cookie sheet. Press each cookie mound with moistened fingers or a fork to flatten slightly. Unbaked cookies should be no larger than 1.5 to 2 inches in diameter. Leave 2 inches between cookies to allow for the dough to spread out while baking.
Step 6
Bake the cookies in the 350-degree oven for 17 to 20 minutes, or until they are slightly brown on the bottom. Because oven temperatures differ, watch the cookies carefully while baking so you do not overcook or burn them.
Step 7
Remove the cookie sheets from the oven. Immediately transfer the cookies with a spatula from the cookie sheet to a plate lined with a paper towel. Leave them there to cool down and get crispy.
Tips and Warnings
- Use golden raisins for a slightly less sweet, more tart flavor. You can also substitute cranberries or craisins for raisins. Add extra cinnamon to the recipe. You can omit nutmeg from the recipe. Store and freeze these cookies in an airtight plastic container.
- If you leave the cookies on the cookie sheet too long, they will stick to the sheet.
