Celery crops peak during the summer months, but the vegetable is available throughout the year. Juicing the stalks and the leaves requires a juice extractor, which is available in most home good stores or department stores. To make one cup of celery juice, you need to add 10 large stalks of celery to the extractor.
Vitamin A
Celery contains the antioxidant beta-carotene, which turns into vitamin A after consumption. Antioxidants help protect your body from free radicals that contribute to aging and some forms of cancer. One cup of celery juice contains 40 percent of your daily recommendation for vitamin A, also referred to as retinol. Vitamin A creates pigments in your eyes' retinas, helps you maintain your vision in low lights, and plays a role in the construction and preservation of your teeth, skin, mucous membranes and soft tissue.
Calcium
One cup of celery juice contains 20 percent of your daily recommendation for calcium. Calcium is also involved in muscular contraction and expansion and keeps your nervous system running smoothly.
Low calcium intake increases your risk of bone deterioration and may contribute to osteoporosis, a condition marked by weak and brittle bones. Pregnant women require additional calcium. If you don't meet your calcium needs during pregnancy, your growing baby will take calcium stores from your bones.
Vitamin C
One cup of celery juice contains 20 percent of your daily requirement for vitamin C. Vitamin C dissolves in water and your body removes extra amounts of it daily through your urine. Additionally, your body does not make vitamin C and it must be included in your diet.
Vitamin C provides the same antioxidant qualities as vitamin A and it aids the growth and repair of tissues within your body. Vitamin C aids the creation of the protein collagen, which makes skin, tendons, ligaments, blood vessels and scar tissue. It also helps heal your wounds and repair and maintain healthy bones, cartilage and teeth.
