Gazpacho is a tomato-based cold Spanish soup made from a mixture of pureed vegetables. This summer treat is extremely low in fat and calories, but can contain a considerable amount of sodium.

Calories

A 13-oz. can of ready-to-eat gazpacho contains 70 calories, 10.7 g of protein, 6.64 g of carbohydrate, 0.7 g of fiber, 0.37 g of fat, 0.04 g of saturated fat and 1,118 mg of sodium, according to the USDA. Protein accounts for approximately 61 percent of the calories, carbohydrate for 34 percent and fat for 5 percent.

Vitamins and Minerals

The same serving of gazpacho supplies 13 percent of the vitamin B-6; 11.9 percent of the vitamin C; 10 percent of the selenium; 8.8. percent of the niacin; 8.2 percent of the iron; 7.9 percent of the phosphorus; 7.5 percent of the folate; 7.2 percent of the potassium; 6.2 percent of the thiamine; 5.8 percent of the vitamin K and 5.2 percent of the pantothenic acid that the Institute of Medicine advises adults should consume daily.

Considerations

A 13-oz. can of gazpacho contains almost 49 percent of the sodium that MayoClinic.com recommends healthy adults limit themselves to daily. To reduce your sodium intake, look for low-sodium gazpacho or make your own at home.
