If you’re sick of the standard oats, pancakes or waffles for breakfast, here’s a dish that’ll rejuvenate your morning taste buds. Breakfast cloud “bread” mainly consists of whipped eggs, making it both deliciously low calorie and gluten free.

To make this recipe, carefully separate three eggs and place the yolks in one bowl and the whites in another. You’ll want to make sure that there’s no yolk in the whites or they won’t stiffen properly (we’ll get to this step in just a bit).

Next, you’ll add cream cheese, Parmesan cheese and a pinch of salt to the egg yolks. Use a hand mixer to beat the mixture until it’s creamy and smooth.

And here’s the egg whites step: Add cream of tartar to the egg whites and use the hand mixer to beat the mixture on high speed. You’ll want to keep whipping until the egg whites have formed very stiff peaks. Take your time doing this — at least 5 minutes — as the cloud bread won’t turn out properly otherwise.

Finally, you’ll gently fold the egg yolk mixture into the egg whites. Quickly spoon the mixture into even rounds on a greased baking sheet. You’ll want to move fast to prevent the rounds from melting.

And as for toppings, we’re using parsley, thyme, turkey bacon and a dash of red pepper flakes. Feel free to get creative and swap in your own garnishments.

Bake for 20 minutes and then broil for one minute until the cloud breads are golden brown.

And while this recipe may sound a bit complicated, it actually takes less than 10 minutes of prep time. Simply remember to beat the egg whites properly, and you’ll be able to savor delightfully fluffy breakfast “bread” in no time.

One serving of this recipe contains 95 calories; 7.34 grams total fat; 6.23 grams protein; and 1.48 grams total carbohydrates.
