Healthy meals are not always the tastiest choices available, but grilled cilantro and lime chicken is certainly an exception. Preparation does not require any special cooking skills and takes little more than 20 minutes. This main dish is high in healthy protein and low in fat content. Grilling outdoors when weather permits or inside on an electric grill makes cilantro lime chicken a year round quick and healthy meal option.
Step 1
Combine the cilantro, lime juice, olive oil, garlic, salt and pepper in a mixing bowl or marinating pan.
Step 2
Marinate the chicken pieces for at least 30 minutes up to a few hours allowing penetration of the marinade mixture into the chicken. If possible, marinating overnight ensures a rich, deep flavor.
Step 3
Clean the grill cooking surface with a wire brush to remove residue from previous uses. Heat up the grill to cooking temperatures.
Step 4
Grill the chicken for four to eight minutes on each side. Leave the chicken on each side long enough to remove the pink color.
Step 5
Place the chicken pieces on a serving dish and serve with steamed broccoli, asparagus or other healthy vegetables.
Tips and Warnings
- Fresh squeezed lime juice may improve flavor but is not necessary. You can mince the garlic yourself, but prepared minced garlic from a jar will save time. Brushing some of the remaining marinade on the chicken pieces while grilling will enhance flavor and moisture, especially if your marinating time was limited.
- Grilling too long on either side will dry the chicken and eliminate some of the tasty marinade flavor.
