Rockfish, also known as rock cod, snapper or red snapper, is a fish that lives off the Pacific coast of Canada and the United States. Rockfish grow slowly and live a long time. They prefer deeper water and as the name suggests, spend time near rock beds under the ocean. You can create effective rockfish dishes a few different ways, including in your oven.

Step 1

Clean a whole rockfish by removing the guts and scales and cutting off the head and tail. Ask your fishmonger to do it if you don’t want to.

Step 2

Preheat your oven to 375 degrees F.

Step 3

Grease a baking dish with butter or spray the bottom with cooking spray.

Step 4

Place the rockfish into the dish and add chopped vegetables like carrot, onion, celery or leeks.

Step 5

Bake for 40 minutes to one hour, until the flesh flakes away easily with a fork.
