Beets have a bright red juice, which you can use to dye your favorite cake and cookie frostings. This natural option colors the frosting as well as a commercial dye, without the worry of artificial substances in your food. The amount of beet juice needed to change the frosting color is minimal, so it does not change the flavor of the frosting. The more juice you add to the frosting, the darker it becomes. This allows you to experiment to get the color you desire.
Step 1
Wash the outside of the beets with cold water to remove all dirt and residue. Pat the beets dry with paper towels.

Remove the beet skins with a sharp paring knife, and chop the beets into 1-inch pieces

Boil the chopped beets in 1 cup of water for about 10 minutes.

Pour the beets in a colander, and catch the liquid in another container. Let the liquid cool.

Prepare your favorite frosting recipe.

Stir 1/2 tsp. of beet juice into your frosting to make a light pink color. Increase the quantity of juice to darken the color.
Tips and Warnings
- You may need to add 1/4 to 1/2 cup of additional powdered sugar if the beet liquid thins out the frosting. If you have a juicer, run the beets through it, collecting the beet juice in a cup. Beet juice made with a vegetable juicing machine produces a darker color than boiled beet juice. Wear gloves and cover the work surface with plastic to avoid stains from the beet juice.
