A Cornish hen, also known as a game hen, poussin or rock Cornish, is a small hybrid chicken typically sold whole. Contrary to the name, the chicken is domesticated and can be either male or female. The flesh of a Cornish hen is softer and juicer than that of a typical chicken. It takes well to light seasoning and cooks best when roasted. Roast Cornish hens have a rich, crispy exterior with succulent and flavorful meat. Approximately an hour is required to roast Cornish hens. This recipe is for one Cornish hen; modify it to suit your needs.

Step 1

Preheat your oven to 375 degrees Fahrenheit.

Step 2

Coat the Cornish hen with a layer of olive oil and sprinkle a seasoning blend over the top. Place the Cornish hen into a baking pan.

Step 3

Stuff the body cavity of the Cornish hen with the roughly chopped vegetables. Poke a meat thermometer into the thickest part of the hen's thigh, ensuring the thermometer does not touch bone.

Step 4

Place the hen into the oven to roast for about an hour or until the thermometer registers 165 degrees Fahrenheit.

Step 5

Remove the hen from the oven and cover it loosely with a sheet of aluminum foil. Allow the roast hen to rest for 10 minutes before discarding the foil. Serve the roasted Cornish hen while it is hot.
