Place the tilapia on a workable, flat surface, such as a shallow dish.
Preheat a griddle to medium heat.
Rub 1 tbsp. of olive oil all over the tilapia.
Season both sides of the tilapia with your favorite herbs and spices.
Spray non-stick cooking spray on the griddle, if you are using a griddle that does not have a non-stick surface.
Put the tilapia on the griddle and cook for 3 minutes on each side.
