Calling all burrito lovers! Here’s a lower-calorie twist on the original. Instead of a flour tortilla, you’ll be using toasted nori, dried seaweed that’s commonly found in Japanese and Korean dishes. By ditching the tortilla, you’ll save yourself about 200 calories.
Nori is an excellent source of B vitamins, which boost heart health and the immune system. It’s also rich in iodine, an essential trace element that helps regulate thyroid gland function and promote nail, hair and teeth health.
We’re stuffing our burrito with sliced avocados, shredded purple cabbage and brown rice for a heart-healthy dose of whole grains. But that’s not all; we’re also throwing in sesame chicken for a savory kick of muscle-building protein.
And if you’ve never worked with nori before, don’t worry. This dish is actually very easy — and quick — to prepare. Simply remember to use brown rice and chicken that have been fully cooled. This will prevent the nori from softening and becoming too chewy. You’ll also want to be gentle when you roll the burrito to avoid tearing the nori.
Finally, keep a small bowl of water on hand. After you’re just about done rolling your burrito, you’ll dip your finger into the water to moisten the top edge of the nori before completing the rolling. The water acts as an adhesive that keeps the roll from coming apart.
Feel free to get creative with your ingredients. And if you’re a plant-based foodie, roasted vegetables or grilled tofu work just as well.
